Spring BBQ Recipes

BBQ Veggie and Halloumi Skewers

Ingredients:

  • 2 zucchinis, sliced
  • 2 bell peppers, cut into pieces
  • 1 red onion, cut into wedges
  • 200g halloumi cheese, cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Toss the zucchinis, bell peppers, red onion, and halloumi in the marinade and let sit for 30 minutes.
  2. Thread the vegetables and halloumi onto skewers alternately.
  3. Preheat the BBQ to medium heat. Grill the skewers, turning occasionally, until the vegetables are tender and the halloumi is golden-brown, about 10-12 minutes.
  4. Serve hot, perhaps with a drizzle of balsamic glaze for an extra flavor boost.
