Spring BBQ Recipes

Lemon Blueberry Bread

Ingredients:

  • 1/3 cup melted butter
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons lemon zest
  • 1 cup fresh blueberries
  • 2 tablespoons sugar (for topping)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Wet Ingredients: In a mixing bowl, whisk together melted butter, 1 cup sugar, lemon juice, and eggs.
  3. Combine Dry Ingredients: In another bowl, combine flour, baking powder, and salt.
  4. Combine Mixtures: Alternately blend in flour mixture and milk into the butter mixture, starting and ending with the flour.
  5. Add Flavors: Fold in lemon zest and blueberries gently to avoid crushing the berries.
  6. Prepare for Baking: Pour the batter into a greased 9x5-inch loaf pan. Sprinkle the top with 2 tablespoons sugar.
  7. Bake: Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow to cool in the pan for about 20 minutes before removing to cool completely on a wire rack.
